A few weekends ago, I made a pitcher of this Watermelon Mint Cooler for a lunch with friends.

I wasn't trying to impress anyone. I simply wanted something refreshing to set on the table that felt like June—something simple, seasonal, and easy to share.

By the end of the afternoon, the pitcher was empty.

Everyone wanted to know what was in it.

The truth is, there isn't much to it at all: watermelon, fresh mint, lime, and water. That's part of what I love about it. It reminds me that nourishment doesn't have to be complicated. Sometimes the best things are the ones made from ingredients already growing in season, assembled in a few minutes, and enjoyed slowly in good company.

June is the perfect time for a drink like this. Watermelon is abundant, sweet, and naturally hydrating. Mint brings a cooling freshness that makes hot afternoons feel a little more manageable. Together they create something that feels special without requiring much effort.

Ingredients

  • 2-3 cups watermelon, cubed or balled
  • Small handful fresh mint, leaves only
  • 1 lime, sliced
  • Filtered water, to fill your container

To serve

  • Ice cubes

Method

  1. 1 Slice watermelon into cubes & place in a pitcher
  2. 2 Add mint leaves & lime slices — don’t crush the mint
  3. 3 Fill with filtered water & chill for at least 30 minutes
  4. 4 Pour over ice & savor slowly. Enjoy.

Britt's note

Make a big batch Sunday evening — it keeps for 3 days in the fridge and gets better as it infuses.
If the mint flavor is overpowering take the mint leaves out after a few hours but leave the watermelon pieces.
